Brioche breakfast loaf

Brioche breakfast loaf is my new favorite way of eating bread in general. I am not much of a bread eater, but when it’s super good, like this loaf. I can’t say no! I love Brioche and it’s a favorite of the French as well. There are so many recipes on how to use this dough. I made this loaf, and it took a bit of time, but it was no time till every crumb was devoured. My son loved it so much, and usually, he gets pretty over things when he eats it more than once! But no one in this household was sick of having a slice of heaven for pretty much every meal of the day until there was no more!

Vegan Breakfast Brioche

These last couple of weeks have been super long and I have felt so uninspired to do anything, but baking like always is a solace for me when the days get too long and I start to miss home. So baking in therapeutic like you should know by now. For a stay at home mom and a toddler that is hyperactive, it gives me that escape from my normal day to day. I love when I discover a new recipe that I know that I’ll make over and over again. This Brioche recipe is one for the books for sure. Maybe your not the wait 24hr for your bread kind of gal, but once you get started, there is no stopping you trying something new. I adapted the recipe from Holycowvegan and I can’t believe that I haven’t tried this recipe sooner!

Vegan Breakfast Brioche

Brioche is traditionally eaten with butter and confiture (jam) but can be eaten various ways savory, in bun Form, or like a cake. There is a bread that is very similar to brioche called gâche which has raisins in them, but to tell you about all the types of bread in France is a whole other blog post… So I’m just going to leave you with this one for now!

Brioche breakfast loaf

Vegan Breakfast Brioche

Ingredients 

  • 2tsp active dry yeast
  • 1/3 cup plus 2 tbsp nondairy milk
  • 1 cup rye flour (or any other gluten-free flour)
  • 1 3/4 cup farine de blé (white unbleached flour or bread flour)
  • 3/4 cup aquafaba a.k.a chickpea brine
  • 1/4 tsp salt
  • 3 tbsp coconut sugar
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup chai seed strawberry jam
  • 1/2 cup strawberry granola

Strawberry chai jam

  • 2 cups chopped strawberries
  • 1/3 cup chia seeds
  • 1/2 coconut sugar
  • pinch of salt

Method

  1. Preheat oven to 180 degrees celsius.
  2. Place the yeast in the lukewarm nondairy milk and let it foam up for about 5 minutes.
  3. Add the flours, chickpea brine, sugar and salt to the yeast. You can do this by hand if you don’t have a mixer.
  4. Mix well till everything is incorporated and then add the olive oil, mixing until all the oil is incorporated. This step will take a while especially when you use your hands.
  5. Place the dough on a floured surface and form a round ball of dough, place the dough in an oiled bowl and set it in a warm place to rise for 90 minutes.
  6. After 90 minutes the dough should have doubled, press back down and refrigerate overnight.
  7. When you wake up, leave the dough our for 10 minutes or so and then tear off a handful of dough, press it flat in your palms and scoop in a tsp of chia seed jam in the middle and roll up into a ball.
  8. Pack the dough balls close to each other and then let them rise for another 10 minutes (not longer).
  9. Sprinkle over extra coconut sugar and granola on top and let it bake for 40-50 minutes till browned.
  10. Let the bread cool completely before slicing, serve with butter and honey!

Strawberry Chai seed jam 

  1. Place all the ingredients and then let the jam cook over medium heat for 30 minutes till thicken.
  2. Place in a glass jar for up too month in the fridge.
