Blueberry lemon crumble, is there anything more decadent. So good, especially served with a generous scoop of whipped coconut cream and ice cream. This is the season of blueberries, and I am loving every second of it. I have been wanting to make a crumble for a while now and I am so happy I did, especially blueberry and lemon. Plus it’s vegan, low carb and so so good! I might even have it for breakfast, mind you.

Blueberry lemon crumble

Blueberry lemon crumble

Ingredients 

  • Two cups blueberries
  • 1/2 cup shredded coconut
  • 1/4 cup coconut flakes
  • 1 cup rolled oats
  • 1/4 cup almond flour
  • 1/3 cup chopped pecans
  • 1-2 tbsp flour
  • 1/4 cup coconut sugar
  • 1/4 -1/3 cup melted coconut oil
  • 1/4 tsp salt
  • Splash of vanilla
  • lemon rind
  • Juice of one lemon
  • 400ml can cooled coconut cream

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Wash the blueberries and place in the cake tin your going to use for the crumble slice and squeeze over the lemon juice and set the blueberries aside.
  3. Mix together the crumble ingredients and crumble over the blueberries, bake for 15-20 minutes until cooked and jammy.
  4. Serve with the whipped coconut cream, ice cream and, fresh mint and lemon rind.

Whipped coconut cream

  1. Pour the coconut cream in to a cooled bowl.
  2. Beat until the cream thickens.
  3. Layer the cream on to the hot crumble alongside a scoop of ice cream.
