Berry Fruit Pizza Whipped Coconut Cream – Got your attention already? Light, Fluffy, Crumbly and fresh. All in one bite? You bet!

I have come upon this recipe by browsing through the Sarie Kos Magazine that is found in SA. What grabbed me was the cookie base of course and then the add-ons of whipped coconut cream and fresh berries… of It is such an easy and light recipe and I made a few adjustments to fit the berry season that we are having right now…Delish!

  • 225g butter
  • 200g icing sugar
  • 2 eggs
  • 500g flour
  • 1 can coconut cream
  • 500g berries
  • 1/2 cup icing sugar
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh mint
  • Caramel syrup


  1. Mix together until dough forms.
  2. Roll out onto a baking tray , smear with 1/4 butter.
  3. Sprinkle over shredded nuts and cinnamon sugar.
  4. Bake for 25-30 minutes until golden brown.
  5. Cut up the berries and mix with 1/4 cup icing sugar, lemon juice and mint. Place in the fridge.
  6. Place the refrigerated coconut cream in a mixing bowl. Add the icing sugar until soft peaks forms.
  7. Decorate with whipped coconut cream, caramel syrup, fresh berries & mint.

Whipped coconut cream

  1. Pour the coconut cream into a cooled bowl.
  2. Beat slowly while adding the sugar until the cream thickens.
  3. Layer the cream then the sliced fruit.
  4. Decorate with caramel sauce.

Such an easy and light dessert! In between healthy and not so healthy, crumbly cookie base, covered in coconut cream and fresh fruit! YUM!
