Banana oat pancakes are a basic pancake recipe that is so easy to make. I would whip up a batch of this healthy pancakes some Sundays. We absolutely adore these pancakes and without even knowing my two boys are getting the healthy goods. They aren’t too heavy for summer and work perfectly well with freshly sliced summer fruit and coconut cream.

They aren’t too heavy for summer and work perfectly well with freshly sliced summer fruit and coconut cream. I have had a pretty busy week, once again. Seems as though nothing much has changed. I get back from vaycay and I’m deep into running around and creating recipes every day. I should just stop myself already, but I get inspired so much with this season.

Banana oat pancakes

Banana oat pancakes

Ingredients 

  • 3/4 cup rolled oats or quick oats
  • 1/4 cup shredded coconut
  • 1 mashed banana
  • 1/3 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 flax egg (1tbsp flax meal in 1/4 cup water)
  • 1/2 tsp baking powder
  • 1 tsp vanilla essence
  • 1/4 tsp salt

Extras

  • Sliced strawberries
  • sliced almonds
  • coconut milk or cream
  • maple syrup

Method

  1. Heat up a skillet and smear with coconut oil, meanwhile mix the pancake ingredients together.
  2. Blend together the oats, coconut, baking powder, and salt.
  3. Mix the flax egg with the water and set aside for 5 minutes to thicken, add the vinegar and the vanilla.
  4. Then mix the wet ingredients into the dry ingredients and let it sit to thicken for about ten minutes.
  5. Dollop about 1 1/2 tbsp each for one pancake.
  6. Top with sliced strawberries, almonds, maple syrup and coconut cream.
