Banana breakfast cake will solve all my breakfast problems these days…windy weather, teething baby, lazy days, drowning in rainy days. All of them equals banana cake if you please. I will vote for banana cake for every situation, it is seriously that good! This cake my dears are made with cooked amaranth, banana and buckwheat flour. It is actually so hard to believe that it is actually good for you!

I will vote for banana cake for every situation, it is seriously that good! This cake my dears are made with cooked amaranth, banana and buckwheat flour. It is actually so hard to believe that it is actually good for you! Life is certainly too short NOT to have cake, even when your cake is made out of just a few ingredients and not the whole grocery ile. Not that I don’t love those kinda cakes, but today I just needed something simple and well, this happened.

So you might ask what is amaranth? (I’m not going to go into detail, click on the link if you want to know more.) Well, it’s a very nutritious grain that is high in magnesium, calcium, and potassium. It looks something like quinoa slash tapioca when cooked, but is so much gooier than quinoa and super filling. These days I am going extreme lengths to let my son eat breakfast. It has been a struggle. I’ve tried oats, yogurt with puree, smoothies, pomegranate seeds and he actually ate some french toast this morning, but that is all I have been able to let him eat. It’s so sad because I absolutely love breakfast and all he want’s to eat is pomegranate seeds. I mean, seriously!

Well, I have tried to feed him this cake, but he does not like banana anymore since he has had it so many times when he was a baby. Crazy to think that he recognizes the taste in anything I make, even smoothies have to be loaded with berries. Luckily it is strawberry season, so there is still hope “fingers crossed”.

Making food for him my husband and I is sometimes such a challenge. I love eating healthy and could live on protein, fruit, and veg. Where my husband does not love healthy as much as I do and needs extra fats and carbs for his day. Then my son loves fresh tomatoes and things he can eat with his hands, but you’re the fool to think that you can serve something twice, except two-minute noodles. Like the french toast, I made this morning was a one time deal. Shame on mommy!

Quelque chose est juste difficile quand il s’agit de cuisiner, comme un bambin avec une chose de texture en cours. J’ai essayé de le nourrir tant de choses, alors j’ai juste abandonné et fait ce gâteau et encore (à cause de la banane) il ne le mangera pas! Même si c’est super délicieux, il peut repérer la banane à des kilomètres. Je l’ai trempé dans du sirop d’érable et de la crème de noix de coco et après quelques bouchées, il en avait assez.

Tout peut être résolu avec un morceau de gâteau, surtout si tôt le matin ne pensez-vous pas? C’est donc la toute première recette que je vais partager en français sur mon site et oui en effet mon français n’est pas parfait, donc il y aura quelques fautes ici et là! J’espère que vous me supporterez et que vous aurez un morceau de gâteau à célébrer!

Gâteau petit déjeuner banane

Gluten free Banana cake

Ingrédients

  • 1 1/2 d’amarante cuite (tapioca de remplacement)
  • 1 1/2 banane écrasée
  • 3/4 tasse de farine de sarrasin ou d’avoine
  • 1/3 tasse de noix de coco râpée
  • 1 cuillère à café de poudre à pâte
  • 1-2 cuillères à soupe de sirop d’érable
  • 1 cuillère à café de vanille
  • 1 tasse de fraises hachées
  • 1 cuillère à soupe de sirop d’érable
  • 1 c. À thé de menthe hachée
  • 1/4 cuillère à café de sel
  • crème de noix de coco supplémentaire

Méthode

  1. Mélanger tous les ingrédients, puis verser dans un moule à gâteau à l’huile de coco et cuire au four pendant 25 minutes jusqu’à 175 degrés Celsius.
  2. Laissez refroidir complètement le gâteau avant de le servir avec des salsa à la fraise et de la crème de noix de coco fraîche.

Salsa à la fraise et à la menthe

  1. Hacher les fraises, ajouter le reste des ingrédients et mettre de côté jusqu’au moment de servir.

Banana breakfast cake

Ingredients 

  • 1 1/2 cooked amaranth (replacement tapioca)
  • 1 1/2 mashed banana
  • 3/4 cup buckwheat or oat flour
  • 1/3 cup shredded coconut
  • 1 tsp baking powder
  • 1-2 tbsp maple syrup
  • 1 tsp vanilla
  • 1 cup chopped strawberries
  • 1 tbsp maple syrup
  • 1 tsp chopped mint
  • 1/4 tsp salt
  • extra coconut cream

Method

  1. Mix all the ingredients together and then pour into a coconut oiled cake pan and then bake for 25 minutes till 175 degrees Celsius.
  2. Let the cake cool completely before serving with strawberries mint salsa and fresh coconut cream.

Strawberry mint salsa 

  1. Chopp the strawberries add the rest of the ingredients and set aside.
