Banana bread donuts are the equivalent to my match made in heaven. It’s a gooey, moist donut with a peanut butter, strawberry maple glaze and it’s seriously too addicting. I have been trying to up my donut game since my last vegan donuts was an epic fail and I was over baking them after my son’s birthday.

But, but who can ever say no to donuts, especially when you can have them for breakfast.

Spring is finally here and even though rain is ever so close on the horizon, I will relish every ray of sunshine before we go back to SA for yet again, winter. This is the unfortunate event of living in such a rainy part of France is that you kind of dread winter and then it is even longer since our vacation time to go to SA is slap bang right in wintertime.

I am not complaining, because I miss my family so much and our son is missing his niece and nephews (without knowing it at this stage) so much. He is growing up so fast and still I wish that he could experience the warming SA culture that we know and love. Every day he just has something extra, especially since he has made some new friends at the creche.

I made a batch of these donuts muffins since he is still hungry after he gets back from school. They say he eats well, but I guess we tend to eat more than the French is used to. He even ate some of his friend’s food the other day… out of their plates! I swear it’s not something that we are teaching him, even though I did the same thing when I was little. DNA, what can you do?

These donuts are light and fluffy, perfect for a snack and even for breakfast. MY son loves them by the way since he does not want to eat a banana or anything that resembles that texture. Easy cheat, healthy and yum!

I adapted the recipe quite a bit from Faring well.

Banana bread donuts

Ingredients 

  • 3 mashed bananas
  • 1/2 cup spelt flour
  • 1/2 cup rice flour or oat flour
  • 1/2 cup shredded coconut
  • 1 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1 tsp vanilla essence

Glaze

1 tbsp peanut butter

2 tbsp maple syrup

1 tbsp strawberry jam (or strawberry chia seed jam- recipe here)

Method

  1. Mix together all the ingredients and let it sit for 5 minutes whilst your heating up the oven to bake the donuts or using a donut toaster.
  2. Smear the toaster with coconut oil before toasting the first batch.
  3. Pour 1 1/2 tbsp batter per donut depending the size and bake until brown (for about 5-8 minutes).
  4. Whisk together the glaze and once the donuts have cooled down after baking, dip them in the glaze and decorate with pomegranate seeds, salted pistachios, and dried strawberries.
  5. Serve right away or place in an airtight container in the fridge for up to two days.

Have a good weekend ahead, Ill be manging on donuts and playing in my son’s sandpit. He just loves playing outside and mommy is joining in!
