Asparagus feta galette

Ingredients 

  • 1 square-shaped vegan puff pastry sheet (just read the ingredients list)
  • 1 bunch of fresh asparagus or canned if you can’t find fresh
  • 200g vegan feta (see recipe here)
  • 1/3 cup Flaked or roasted chopped almonds
  • 1 tbsp onion seeds
  • 2-3 tbsp good quality olive oil
  • 1 tbsp fresh or dried thyme
  • salt and pepper to taste

Method

  1. Preheat oven to 180 degrees Celcius.
  2. Roll out the square puff pastry sheet, and smear with the vegan feta, wash and slice off the ends of the asparagus and neatly lay on top of the puff pastry sheet.
  3. Pinch over the edges and brush with olive oil, sprinkle on the onion seeds, dried thyme, salt, and pepper to taste.
  4. Sprinkle on the chopped roasted almonds or flaked almonds and bake for 15-18 minutes until brown on top.
  5. Serve as a main dish with a side salad or as a side dish to a BBQ lunch or dinner.

Notes:

  • The asparagus can be replaced with carrots, tomatoes, or even zucchini ribbons.
  • The vegan feta can be subbed with homemade cashew cream cheese or storebought vegan cream cheese.
