Apricot coconut pancakes are calling my name right about now, it’s summer written all over it. I just came back from my vacation in South Africa and after a whole month of winter I am embracing the summer and these pancakes just make it even more of a celebration.

All there is right now are these Apricot coconut pancakes. Man, I am so happy to be back to summer and back in my kitchen, even when the blazing heat is coming down. I seriously don’t mind! I am not a winter person and after this whole month of freezing cold in South Africa, I am embracing the summer and the only way to do that is to head right for the beach, am I right? Firstly when we arrived back we had only one day to rest before we went to Biarritz for a few days.

I must say that we were beyond tired from traveling, but the sea air just revived our spirits. We stayed in a cute little Air BNB, owned by a super nice French couple. It was about 10 minutes walk away from the beach- which is not ideal for us (thanks to our stupidity or fatigue we forgot the pram at home). Which meant we had to drive all the way to Bayonne to go and buy a cheapy that we’ll never use again. Always winning at parenthood!

Anyway- We arrived late afternoon, that’s when my son thought it was time to swim and like normal we were totally unprepared!  He dived into the water and later on, he ran around with his father’s t-shirt on, so funny, or shall I say embarrassing. I actually walked a few meters behind him just to make sure no one knew we were related. Jokes, he still is small enough for me not to feel too embarrassed just yet. Hopefully, he won’t repeat this again when he is a teenager…

So the salty air did us a whole lot of good. Biarritz is one of my favorite French towns so far, just because firstly the beach was super nice with soft white sand, there is a jogging route right next to the beach (perfect for me),  Hydrangeas -my favorite flowers where everywhere, cute boutiques (win), the vibe was so calming, the Biarritz people are so nice, hello- Bali bowls (duh) and the beautiful architecture. I know from a tourist’s point of view it’s a pretty simple summary like on trip advisor and that is certainly not what you need most of the time, but three days were pretty enough for me to decide to go there again!

After this super long vacay, I am so happy to be home and I am so happy to have a home and to have a family. This vacation just made me realize that everything is so temporary and I want to be the best mom and wife I can be. Everything else is just a bonus.

Now, though I just want to dive face first into everything I see at the market and supermarket. I have had above my average amount of coffee and I’m looking to cleanse all this nasty winter off me asap.  First of all, I’m not a detoxer, but just an all in all do everything in moderation kind of girl. So these pancakes are quite respectable, healthy and still super delicious! And that is just the kind of meal for me…

Apricot coconut pancakes

Ingredients 

  • 1 cup quick oats or whole wheat flour
  • 1 very ripe banana
  • 1/4 cup almond milk
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1/3 roasted shredded coconut
  • 1 tbsp peanut butter
  • 1 tsp vanilla essence
  • 1/4 tsp salt

Extras

  • 1-2 sliced apricots
  • Sliced banana
  • fresh berries like gooseberries
  • extra maple syrup
  • cooled coconut milk
  • coconut sugar
  • cinnamon

Method

  1. Place all the smoothie ingredients in a blender and blend until smooth.
  2. Let it stand for 10 minutes or so to allow the dough to thicken.
  3. Then heat up a skillet and dollop 2 two generous scoops of batter for each pancake, layer on the apricot slices and then add a few sprinkles of coconut sugar before flipping over.
  4. Allow cooking for 2 to 3 minutes, once cooked then layer on each other and then add the berries, maple syrup, and coconut cream.

I have so many plans and recipes to make that I just can’t seem to see straight. I need to make a list. More apricot recipes, salads, and drinks? What do you guys think?

Hopefully, I’ll get it all over and done with, since my son has a whole month break of his creche. (summer vacay and all…)  The things we get used to so quickly. Like it was a shock after we came back from vacay- I handed him off and some days I just really spend time with him just before bed. Now it’s back to 24/7 and I’m already looking for things to entertain him with!
