Apple butterscotch Malva pudding is the perfect way to celebrate heritage day and autumn all at once. Since summer is starting in SA and winter is around the corner, I thought to combine my season and one of my utmost favorite desserts from SA. I had to add spin and the butterscotch sauce with this pudding just works wonders!

Since summer is starting in SA and winter is around the corner, I thought to combine my season and one of my utmost favorite desserts from SA. I had to add spin and the butterscotch sauce with this pudding just works wonders!

Now since today is heritage day in South Africa and food is mostly the main concern, in my book anyway, I just had to make my favorite dessert this past weekend to share with you all. We are overflowing with apples right now and baked desserts with fruit are just so delicious. I remember from my hostel days, we used to have baked apple pudding with custard, but the best part of this apple Malva pudding is the fact that it gets drenched in Butterscotch sauce. Who doesn’t love a saucy pudding?

Traditionally this pudding is made with butter, eggs, and sugar so I just had to make a couple of tweaks and you know what it tastes even better than the real thing. It’s so amazing that you can make traditional meals plant-based and they taste even better! I would’ve loved to make this dessert for my family in SA and hear their thoughts on it. That is certainly one thing I’m missing today, my fam bam.

But this pudding will have to do with my hub. A giant bowl of Malva, custard and ice cream will cover this day pretty well! The perfect bite between lukewarm saucy, the tang of the apple, smoothness of the custard and the sweet cold addition of the ice cream. Man, this is just the perfect recipe, since autumn is officially here, I’ll be making this one very regularly!

Apple Butterscotch Malva pudding

Apple Butterscotch Malva pudding

Ingredients 

  • 250g whole wheat or spelt flour
  • 1/3 cup almond flour
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • pinch of salt
  • 1/2 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 flax egg (1 heaped tbsp flaxseed meal with added water to thicken)
  • 1 tbsp apricot jam
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1 cup peeled and sliced apples

Butterscotch sauce

  • 200 ml coconut cream or full-fat coconut milk
  • 1/4 cup coconut sugar
  • 1/2 cup vegan caramel 
  • 1 tsp vanilla essence
  • 1/2 tsp corn starch or potato protein
  • Pinch of salt

Method

  1. Mix the flour, almond flour, baking powder, and salt then set aside.
  2. Then mix the milk, apple cider vinegar, and vanilla essence.
  3. Let it curdle for a few minutes and then add the apricot jam, flax egg, and the melted coconut oil.
  4. Mix the wet into the dry, add the baking soda and mix well, then smear a round tart base with coconut oil or non-cooking spray.
  5. Pour the batter into the mold and decorate the top with the apples, smear with extra melted coconut oil and sprinkle on some extra coconut sugar.
  6. Bake for 20 minutes until brown on top and then pour over the sauce after the pudding has cooled slightly.
  7. Pour the sauce over little by little until the pudding has soaked it all up, serve the pudding lukewarm with vegan custard and ice cream.

Butterscotch sauce

  1. Place all the sauce ingredients in a saucepan and bring to a simmer until the sauce starts to thicken slightly.
  2. Keep lukewarm until the pudding has baked and pour the sauce on top.
  3. Set a little bit of the sauce on the side for serving.
