Almond lover granola

Ingredients 

  • 1 cup almonds
  • 2 cups rolled oats
  • 1 cup coconut flakes
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup almond butter
  • 1/4 cup maple syrup or agave
  • 1/4 cup coconut oil
  • Fresh fruit
  • Yogurt to serve

Method

  1. Preheat oven to 175 degrees Celcius. 
  2. Mix the dry ingredients in a bowl.
  3. Melt the coconut oil, add the almond butter, maple syrup and vanilla.
  4. Pour the wet over the dry ingredients and scoop on to a parchment-lined baking tray then place in the oven to bake for 15-20 minutes.
  5. Remove once brown and then let it cool before storing it in a glass container for up to three weeks.
  6. Serve with fresh fruit, yogurt or as a snack.
