Almond butter popcorn cups are just heavenly. Things get super serious when chocolate and popcorn is involved…Oh and almond butter. All three of these are my favorite and I just simply can’t resist. I used to munch buckets of popcorn during pregnancy and after because I was just so hungry. The munchies are so tough when your preggo or breastfeeding.

There are so many healthy options these days when it comes to making healthier snacks. But the question is, are they easy to make, do you have all the ingredients in your cupboard at this point in time. Well corn kennels are a staple in my house, coconut oil I use frequently to cook with and obviously almond butter is non-negotiable (peanut butter works well too)

I have tried to share my love of popcorn with my son, but he doesn’t seem to get it. He just chews it a bit and then spits them out of his mouth, but he has a serious addiction to the fresh stuff, corn, can’t seem to get enough of the stuff. Someday I’ll covert him I am sure. He’ll be eating these by the buckets. Don’t know if that will be a good thing or not.

I really want to share more on what I am feeding him, but there seems never enough time to get everything done. I don’t know how some of the women do it all, work like a boss and be a good mom. It’s exhausting being a full-time mom and doing what you love as well, but I guess that is what coffee is for and loads and loads of power naps.

So with no delay, here is the recipe! Kid-friendly, healthy and easy to prepare. Who can say no to that!

Almond butter popcorn cups

Serves

6-8 people

Ingredients 

Chocolate

  • 1/2 cup coconut oil
  • 1-2 tbsp almond butter or peanut butter
  • 1/4 cup coconut butter (optional) melted with 1 tbsp hot water
  • 1/3 cup maple syrup (honey or agave)
  • 2/3 cup cocoa powder
  • pinch of salt

Filling

  • 1/2 cup almond butter or roasted almonds
  • 1/3 cup Coconut milk or cream (or almond milk)
  • 1/4 cup maple syrup (honey or agave)
  • pinch of salt

Decor

  • Roasted almonds
  • Popcorn
  • Pinch of salt

Method

  1. Melt the coconut oil, add the melted coconut butter, maple syrup, coconut, and salt.
  2. Pour this chocolate 1/4 of the way into the parchment paper cups and freeze, once set scoop a tsp of the almond buttercream into these cups, add more chocolate till 3/4 and then decorate with chopped roasted almonds and popcorn.
  3. Freeze for up to one month. Eat when desired!

Almond buttercream 

  1. Place the almond butter, coconut, 1/2 of the maple syrup, pinch of salt and coconut cream in a blender and blend until smooth.
  2. You can sub the almond butter with peanut butter or just use roasted almonds and blend just a bit extra.
  3. Place the leftovers in a jar in the fridge for up to three weeks.

Extras that you can add is fresh fruit like raspberries or pomegranate seeds. Cashews instead of almonds and of course shredded coconut will go down very well too. So many options to make this a fun activity to do with your mini-me’s too.
