Almond butter cookies are the ultimate toddler snack. I made a quick batch of healthy cookies, just because I was so over buying bio cookies and not knowing whether they are actually any good. I like to know the kinds of foods my son is eating most of the time, even though he is always putting some kind of something in his mouth these days. I swear he has eaten so many leaves, play dough and old food from the ground. At least I know these cookies are nothing but good stuff!

These cookies are crumbly so be aware that your just cleaned kitchen flour will not look the same after, not that anything ever does once a toddler gets their hands on them. But like I said so many times, I love it when my son loves the food I make and he is quite a picky eater, due to his dad’s love for take away. I joke and say, my husband, is a fat kid inside of a skinny and lean man’s body.

He loves everything that is not healthy, well most of the time anyway. He’ll choose ice cream over basically any other food. So you can just guess the dilemma I have some days feeding these two healthy food. It’s not that hard to cheat, they just don’t always know that the sweet carrots are actually sweetened with agave and soy butter, it tastes exactly the same.

We love drinking coffee somewhere other than our house. It’s our family outing when we need a “break” from being home with an amped up 18-month-old. Not that it’s any easier somewhere else, but we like to pretend it is. It does help just a tad. My son has also learned to dip his cookies, rusks or basically anything dippable into our coffees whenever he sees us drinking a coffee. He actually has become so accustomed to us hanging around coffee shops that he is in the know on what to do when you receive a cookie with your coffee. I mean isn’t that the best part, and oh the foam on top, that is all his btw!

Almond butter cookies

Five ingredient almond butter cookies

Ingredients 

  • 1 cup almond butter or peanut butter
  • 1/2 cup almond meal
  • 1/2 cup Spelt flour or any other flour like whole wheat or oat flour
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Naked peanut butter cups chopped or any other vegan or dark chocolate chips you prefer.
  • Add few splashes of almond milk to get the consistency just right.

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Mix all the ingredients except the chocolate chips into the dough, if you want chocolate pieces in it, press it in once you have formed the cookies.
  3. Line a baking tin with parchment paper.
  4. Roll about 1 heaped tsp of the dough for each cookie, press flat with a fork or make use of the peanut butter cups. By slicing them in the middle or chopping them and squishing them into the cookies.
  5. Bake for 10-15 minutes till golden brown.
  6. Remove to cool and store in an airtight container for one week or in the fridge for up to two weeks.

Notes:

  • This recipe is perfect to try making them with your little one, they take minimal effort, mess and baking.
  • You can add raisins, nuts or even coconut to this recipe.
